This extraction is typically done through a method known as cold pressing. The fruit is harvested between December and March and takes a staggering 200 kilograms of bergamot fruit to yield just one kilogram of essential oil. With Italy producing approximately 100 tonnes of this precious oil annually, the global demand for bergamot continues to grow, fuelled by its unique olfactory properties and versatile applications.
